A creamy, vegan, cool and refreshing sauce for tacos, bowls, whatever!
Spicy Cilantro Lime Sauce
½ c. cashews
1 Serrano chile
½ c. cilantro leaves
1 lime, juiced
⅛ tsp. Salt
¼ c. water
Bring 1 c. water to a boil and add cashews. Take off heat and let sit for at least 30 minutes (longer will just mean a creamier sauce).
Deseed and de-stem the Serrano chile.
Drain cashews and add all ingredients to a blender, Vitamix, or food processor and blend until smooth. Depending on your blender, this could take 2-5 minutes.
